What files would I edit if I want to modify the left side menu items in the admin. I want to hide the "Edit Template" links from my client so they don't accidentally mess them up.

You need to remove or comment out the following lines (approximately #438-442):

array
   (
      'title' => 'Page Templates',
      'reference' => SITE_URL.'edit_page_templates/',
   ),

at the /admin/config.php file.
