I am changing the NOT DEFINED caption in the edit list section to --Select -- and it's not allowing the change.  It shows that it's changed on that page, but "not defined" still shows up in the form.

Also, BTW, there is a misspelling on the page:

Cahnge Undefined Value Caption

Some other issues I am experiencing that I need help with:

show_email

If I edit a profile and UNCHECK the box, it does not save and defaults back to the checked box.

Where Can I edit the layout of a group?  Specifically, I want to align top the cells so they are easier to read.
